No beer Coconut Shrimp

Here is what you need  :

  • 1 egg
  • 1/2 cup of all-purpose flour
  • 2/3 cup of coconut water
  • 1 1/2 teaspoons of baking powder
  • 1/4 cup of all-purpose flour
  • 2 cups of flaked coconut
  • 24 shrimp
  • 3 cups of oil for frying

Here is what you need to do:

  1. In medium bowl, mix egg, flour, coconut water, and baking powder. Place flour mixture and flaked coconut in two separate bowls.
  2. Hold shrimp by tail, and dredge in flour mixture batter; allow excess to drip off of the shrimp. Roll shrimp in coconut, and place on a baking sheet lined with wax paper. Refrigerate for 30 minutes to harden. Meanwhile, heat oil to 350 degrees F  in a deep fryer.
  3. Fry shrimp in a batch of 6 – 12, then cook cook, turning to other side once its golden brown, then repeat. Using tongs, take shrimp out shrimp then put on a strainer till excess oil is gone. Serve warm with your preferred dip.
